Banana Coconut Granola // Granola alla banana e cocco

I've said this before, but I think breakfast is the most important meal of the day and as such it's important to feed the body with some real food right away. That's why I eat oats almost every day. When it's cold, I make warming oatmeals; when it's hot, I make overnight oats. Unless when I forget. That's when granola comes handy.

If you know me, you should know I'm not talking about that store-bought stuff loaded with sugars, fats and ingredients you didn't even know existed and sometimes you can't even pronounciate. Nope, I'm talking about homemade granola.


But the reason I love making it at home isn't only because that way I know what I'm eating, but because I love, absolutely love how my house smells when I'm making it. And this banana coconut granola will make your house smell amazing. And it tastes amazing as well!


It is crunchy, sweet and it tastes like banana bread with a tropical hint. All in a bowl. In other words, it's delicious.

INGREDIENTS
  • 200 g (2 cups) rolled oats
  • 70 g (1 cup) unsweetened shredded coconut
  • 2 very ripe bananas
  • 6 g (1 tablespoon) flaxseed meal
  • 30 ml (2 tablespoons) water
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 40 g (1/3 cup) chopped walnuts

INSTRUCTIONS
  • Preheat the oven to 170°C (325°F). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flaxseed meal and water. Let sit for 5 minutes.
  • Add the bananas and mash them well. Stir in the cinnamon, nutmeg and salt. Add the oats, coconut and walnuts and mix until well combined.
  • Transfer the mixture to the baking sheet and bake for 30-35 minutes, gently mixing the granola with a fork after 20 minutes.
  • Allow the granola to cool down completely, then store it in an airtight container.


L'ho già detto, ma secondo me la colazione è il pasto più importante della giornata e in quanto tale è importante nutrire subito il corpo con il cibo giusto. Ecco perché mangio i fiocchi d'avena quasi tutti i giorno. Quando è freddo faccio caldi porridge; quando è caldo, faccio gli overnight oats. Tranne quando mi dimentico. Ecco quando la granola diventa utile.

Se mi conoscete, dovreste sapere che non sto parlando di quella roba comprata al supermercato piena di zucchine, grassi e ingredienti che non sapevate nemmeno esistessero e che a volte neanche riuscite a pronunciare. No, sto parlando della granola fatta in casa.

Ma la ragione per cui amo farla a casa non è soltanto perché così so quello che mangio, ma perché amo, amo alla follia il profumo che ho in casa quando la faccio. E questa granola alla banana e cocco farà profumare magnificamente la vostra casa. E anche il sapore è fantastico!

È croccante, dolce e sa di banana bread con una nota tropicale. Il tutto in una ciotola. In altre parole, è deliziosa.

INGREDIENTI
  • 200 g fiocchi d'avena
  • 70 g cocco grattugiato senza zucchero
  • 2 banane molto mature
  • 6 g semi di lino macinati
  • 30 ml acqua
  • 1 cucchiaino cannella in polvere
  • 1/4 cucchiaino noce moscata in polvere 
  • 1/4 cucchiaino sale
  • 40 g noci spezzettate

PROCEDIMENTO
  • Preriscaldate il forno a 170°C. Foderate una teglia con carta da forno.
  • In una grande ciotola, mescolate i semi di lino macinati e l'acqua. Lasciate riposare per 5 minuti.
  • Aggiungete le banane e schiacciatele bene. Mescolatevi la cannella, noce moscata e sale. Aggiungete i fiocchi d'avena, cocco e noci e mescolate bene finché non è ben amalgamato.
  • Trasferite il composto nella teglia e cuocete in forno per 30-35 minuti, mescolando gentilmente la granola con una forchetta dopo 20 minuti.
  • Fate raffreddare la granola completamente, quindi conservatela in un contenitore a chiusura ermetica.
