Whole Wheat Greek Yogurt Pancakes // Pancakes integrali allo yogurt greco

Monday, February 27, 2017

Shrove Tuesday is just around the corner and traditions have people from a lot of different countries celebrating with costume parties and a lot of deep fried sweets. I'm not going to lie, I'm a huge fan of the deep fried sweets part and, although I follow a healthy lifestyle, I don't deprive myself of those. It happens once a year after all.

When I opened the blog though I promised I'd keep my recipes as healthy as possible so since this day is also known as Pancake day, I made pancakes, which are definitely more healthy than fried food.

And the recipe I'm sharing with you today is my absolute favourite and it's from Everyday Belle. These are the best pancakes I've ever had! They are thick, fluffy and delicious. They don't require a lot of ingredients, and they are very healthy, especially if you use whole wheat flour like I always do.

My favourite thing about these pancakes is that they are neither sweet nor savoury which makes them perfect with everything, from maple syrup and fruit to delicious sautéed mushrooms.

INGREDIENTS
1-2 servings
  • 170 g (6 oz) Greek yogurt
  • 1 egg
  • 50 g (1/3 cup + 1 tablespoon) whole wheat flour
  • 1 teaspoon baking soda

INSTRUCTIONS
  • In a bowl, combine the greek yogurt and egg.
  • In a separate bowl, combine the flour and baking soda.
  • Pour the dry ingredients into the wet ones and stir well to combine.
  • Heat a non-sticking pan over medium heat. Add spoons of the batter and cook until bubbles start to form, 2-3 minutes. Flip the pancakes and cook until golden-brown.

È solo una volta all'anno dopotutto.
