Chicken and Broccoli Ramen // Ramen di pollo e broccoli

Three, maybe four years ago I became obsessed with instant ramen. At the time I really loved that stuff. Then I slowly started to notice that it didn't taste that good and I start throwing the flavour package away and seasoned the noodles with whatever I wanted. But that was before.

Since I've embraced a healthy lifestyle, I've been trying to avoid as mush as possible process foods, and instant ramen falls in that category. But I didn't give up the idea of eating ramen, so I watched a YouTube video (I can't put the link because sadly it's not there anymore) and made the noodles myself. This happened around this time last year. That's when I made my first ramen.


A year later here I am, sharing with you an upgraded version of that recipe only this time the broth had more flavour, I used oyster mushrooms instead of button mushrooms - I believe they are a bit more appropriate for Asian cuisine -, the boiled egg isn't dry but rather soft, and the chicken is tender.


But that's not all, this time I also added a lot of green onion which adds a nice tanginess and freshness to this hot soup and black sesame seeds because they taste amazing and just looked beautiful.


INGREDIENTS
1 serving
  • 50 g (1.8 oz) ramen noodles
  • 70 g (2.5 oz) chicken breast, sliced
  • 70 g (1 cup) broccoli florets
  • 20 g (1/3 cup) chopped oyster mushrooms
  • 1 egg, boiled
  • 1 piece fresh ginger, grated
  • 1 garlic clove, grated
  • 1 tablespoon soy sauce
  • 1 green onion, chopped
  • 1 teaspoon extra virgin olive oil
  • 480 ml (2 cups) chicken stock
  • Black sesame seeds
  • Salt

INSTRUCTIONS
  • Heat the oil in a pot over medium heat, add the garlic and ginger and cook, stirring, for 1 minute. Add the broth and soy sauce, give it a stir, and bring to a boil. Reduce to low and simmer for 5 minutes.
  • Add the mushrooms and cook for 5 minutes. Add the noodles and broccoli, stir, and cook for 3-4 minutes, until the noodles are al dente.
  • Add the chicken breast, seasoned with salt, and cook for 1-2 minutes, until both the chicken and noodles are done.
  • Serve with the boiled egg, green onion and sesame seeds.

NOTES
  • To boil the egg: place the egg in a pot, cover with cold water and bring to a boil. Cook for 5 minutes, then drain and cool it down under cold water. Peel it and cut it in half.
  • If you use dry noodles, cook them following the instruction and add them in the ramen at the end.

Tre, forse quattro anni fa sono diventata ossessionata con il ramen instantaneo. All'epoca mi piaceva proprio tanto quella roba. Poi ho lentamente iniziato ad accorgermi che non aveva molto sapore e ho iniziato a buttar via le buste con il sapore e insaporire i noodles a mio piacimento. Ma quello è il passato.

Da quando ho iniziato uno stile di vita sano, ho cercato di evitate i prodotti industriali il più possilibe e il ramen instantaneo fa parte di quella categoria. Ma non ho rinunciato all'idea di mangiare ramen, così ho guardato un video su YouTube (non posso mettere il link perché purtroppo il video non c'è più) e ho fatto i noodles. Questo è successo più o meno in questo periodo lo scorso anno. Ed è quando ho fatto il mio primo ramen.

Un anno dopo, eccomi qua a condividere con voi una versione migliorata di quella ricetta soltanto questa volta il brodo è più saporite, ho otilizzato i funghi ostrica invece dei champignon - credo che siano un po' più appropriati per la cucina asiatica -, l'uovo sodo non è secco ma abbastanza morbido, e il pollo è tenero.

Ma non è tutto, questa volta ho anche aggiunto tanto cipollotto che aggiunge una piacevole piccantezza e frescezza a questa zuppa calda e semi di sesamo nero perché sono buonissimi e bellissimi.

INGREDIENTI
1 porzione
  • 50 g noodles per ramen
  • 70 g petto di pollo, a fettine
  • 70 g broccolo, a cimette
  • 20 g funghi ostrica, tagliati
  • 1 uovo, sodo
  • 1 prezzo zenzero fresco, grattugiato
  • 1 spicchio aglio, grattugiato
  • 1 cucchiaio salsa di soia
  • 1 cipollotto, tagliato
  • 1 cucchiaino olio extravergine di oliva
  • 480 ml brodo di pollo
  • Semi di sesamo nero
  • Sale

PROCEDIMENTO
  • Scaldate l'olio in una pentola su fiamma media, aggiungete l'aglio e zenzero e cuocete, mescolando, per 1 minuto. Aggiungete il brodo e salsa di soia, mescolate e portate a bollore. Riducete la fiamma al minimo e fate sobbollire per 5 minuti.
  • Aggiungete i funghi e cuocete per 5 minuti. Aggiungete i noodles e broccoli, mescolate, e cuocete per 3-4 minuti, finché i noodles non saranno al dente.
  • Aggiungete il petto di pollo, salatato, e cuocete per 1-2 minuti, finché sia il pollo che i noodles sono cotti.
  • Servite con l'uovo sodo, cipollotto e semi di sesamo.

NOTE
  • Per l'uovo sodo: mettete l'uovo in una pentola, coprite con acqua fredda e portate a bollore. Cuocete per 5 minuti, quindi scolatelo e fatelo raffreddare sotto acqua fredda. Sgusciatelo e tagliatelo a metà.
  • Se utilizzate i noodles secchi, preparateli seguendo le istruzioni sulla confezione e aggiungeteli nel ramen alla fine.
