Purple Cauliflower and Edamame Rice // Riso con cavolfiore viola ed edamame

I know, I know, a while back I told you I don't like cauliflower, but there was this beautiful purple cauliflower at the store and I couldn't help but buy it. I mean, it's purple, how does it get any better than that?

But since I'm no fan of cauliflower, I stumbled across a little problem at home, what am I going to do with this thing? Because of the low-carb trend going on, for a brief lapse of time, I thought to make cauliflower rice and pair it with edamame because of the colours.


Then I stumbled across another problem, the dish would have been very low in calories and not so nutritious, and since I wasn't in the mood to add a lot of fat, I eventually ended up using white rice. I know, I know, brown is better, but I didn't have the time to cook it, and white does look better with the other ingredients.


I steamed the cauliflower to keep the nutrients, and cooked the edamame with a little bit of water, so I had to spice up the rice a little bit with some nutmeg to give the dish - especially the rice - more flavour. The sesame seeds are a last minute add, they add crunchiness and more contrast.


INGREDIENTS
1 serving
  • 62 g (1/3 cup) Basmati rice
  • 1 teaspoon extra virgin olive oil
  • 60 g (1/2 cup) frozen, shelled edamame
  • 100 g (1 1/2 cup) purple cauliflower florets
  • 1/2 teaspoon nutmeg
  • Himalayan salt
  • Black sesame seeds

INSTRUCTIONS
  • In a pot, heat the olive oil over medium heat, add the rice and toast it for 1-2 minutes. Pour 160 ml (2/3 cup) of water, nutmeg and salt, stir,  bring to a boil, reduce to a simmer, cover and cook for 10 minutes. Remove from the heat, let the rice rest for 5 minutes, then fluff with a fork.
  • Place water in a pot with a steamer and bring to a boil. Put the cauliflower florets into the steamer, cover, and cook for 3-4 minutes.
  • In a pan, add the edamame, 60 ml (1/4 cup) of water and salt, and cook for 5 minutes.
  • When all the ingredients are cooked, stir them together and serve sprinkled with sesame seeds.


Lo so, lo so, un po' di tempo fa vi ho detto che non mi piace il cavolfiore, ma c'era questo bellissimo cavolfiore viola al negozio e non ho saputo resistere. Voglio dire, è viola, come può andare meglio di così?

Ma dato che non sono una fan del cavolfiore, mi sono imbattuta in un piccolo problema a casa, cosa farò con questa cosa? A causa del trend povero di carboidrati, per un breve lasso di tempo, avevo pensato di fare il riso di cavolfiore e abbinarlo con l'edamame per via dei colori.

Poi mi sono imbattuta in un altro problema, il piatto sarebbe stato molto povero di calorie e non molto nutriente, e dato che non ero dell'uomore per aggiungete molto grasso, ho eventualmente deciso di utilizzare il riso bianco. Lo so, lo so, quello integrale è meglio, ma non avevo il tempo di cuocerlo, e il bianco si abbina meglio con gli altri ingredienti.

Ho cotto il cavolfiore al vapore per mantenere i nutrienti, e cotto l'edamame con un po' di acua, così ho dovuto speziare un po' il riso con un po' di noce moscata per dare al piatto - soprattuto al riso - più sapore. I semi di sesamo sono un'aggiunta dell'ultimo minuto, aggiungono croccantezza e più contrasto.

INGREDIENTI
1 porzione
  • 62 g riso Basmati
  • 1 cucchiaino olio extravergine di oliva
  • 60 g edamame congelati
  • 100 g cime di cavolfiore
  • 1/2 cucchiaino noce moscata
  • Sale dell'Himalaya
  • Semi di sesamo nero

PROCEDIMENTO
  • In una pentola, scaldate l'olio di oliva su fiamma media, aggiungete il riso e tostatelo per 1-2 minuti. Versate 160 ml di acqua, noce moscata e sale, mescolate, portate a bollore, riducete la fiamma, coprite e cuocete per 10 minuti. Togliete dal fuoco, fate riposare il riso per 5 minuti, quindi sgranate il riso con una forchetta.
  • Versate abbondante acqua in una vaporiera e portate a bollore. Aggiungete il cavolfiore, coprite, e cuocete per 3-4 minuti.
  • In una padella, aggiungete l'edamame, 60 ml di acqua e sale, e cuocete per 5 minuti.
  • Quando tutti gli ingredienti sono pronti, mescolateli insieme e servite cosparso con i semi di sesamo.
