Red Lentil Pancakes // Pancakes di lenticchie rosse

You want what's something that I haven't done in a while other than not posting on here? Pancakes. I don't know why, but I haven't made them in months, since last April to be precise, when I remade my blueberry buckwheat pancakes for my birthday. And to be honest, although I love pancakes, I haven't been missing them.

Until the other day when I decided I would have pancakes for lunch and after spending a lot of time on Pinterest, I found these deliciously-looking lentil spinach pancakes and I had to try them. This was last Wednesday. Then last Friday, I finally got to try them (lentils needed to be soaked and I wasn't at home on Thursday) and let me tell you, it was worth the wait.


They take more time to make than your typical pancakes because of the soaking, but they are probably the most simple and easy pancakes you'll ever make. I skipped the spinach and changed herbs and spices, but there's only one ingredient you really need to make these, split red lentils. And they are delicious.

The best part? You can enjoy them with some veggies for lunch, dinner or even breakfast, or snack on them during the day, or you could use them instead of bread. Warm or cold, they always taste good!


INGREDIENTS
1 serving
  • 90 g (1/2 cup) split red lentils
  • 30 ml (2 tablespoons) water
  • 1 garlic clove
  • 1/2 teaspoon dried basil
  • Salt
  • Black pepper

INSTRUCTIONS
  • Soak the lentils overnight. Drain and rinse well.
  • Add all the ingredients in a blender and blend until smooth.
  • Heat a non-stick pan over high heat. Reduce to medium, add tablespoons of the batter and cook for about 2 minutes on each side.


Sapete cos'è che non ho fatto da un po' oltre a non postare qui sul blog? I pancakes. Non so perché, ma non l'ho fatti da mesi, dallo scorso aprile per essere esatti, quando ho rifatto i miei pancakes di grano saraceno ai mirtilli per il mio compleanno. E ad essere onesta, anche se adoro i pancakes, non mi sono mancati.

Fino all'altro giorno quando ho deciso di mangiare pancakes a pranzo e dopo aver trascorso tanto tempo su Pinterest, ho trovato questi pancakes di spinaci e lenticchie dall'aspetto delizioso e dovevo provarli. Questo è successo mercoledì scorso. Poi venerdì scorso sono finalmente riuscita a provarli (le lenticchie dovevano essere messe in ammollo e il giovedì non ero a casa) e lasciatemelo dire, è valsa la pena aspettare.

Ci vuole un po' più di tempo rispetto ai pancakes normali per via dell'ammollo, ma sono probabilmente i pancakes più semplici e facili che farete mai. Ho omesso gli spinacci e ho cambiato erbe e spezie, ma c'è solo un'ingrediente di cui avete veramente bisogno per farli, lenticchie rosse decorticate. E sono deliziosi.

La parte migliore? Potete gustarli con delle verdure per pranzo, cena o addirittura colazione, o come snack durante il giorno, oppure al posto del pane. Caldi o freddi, sono sempre molto buoni!

INGREDIENTI
1 porzione
  • 90 g di lenticchie rosse decorticate
  • 30 ml di acqua
  • 1 spicchio d'aglio
  • 1/2 cucchiaino di basilico secco
  • Sale
  • Pepe nero

PROCEDIMENTO
  • Mettete in ammollo le lenticchie durante la notte. Scolatele e sciacquatele bene.
  • Mettete tutti gli ingredienti in un frullatore e frullate finché sarà omogeneo.
  • Scaldate una padella antiaderente su fiamma alta. Riducete a media, aggiungete cucchiaiate di impasto e cuocete per circa 2 minuti per lato.
