Buckwheat and Squash Gnocchi with Kale // Gnocchi di grano saraceno e zucca con cavolo nero

I don't think anyone even noticed, but I didn't post anything last Friday. Don't worry, nothing bad happened, I was just too lazy and tired to write a post so I took a day off. But now I'm back and I have a pretty delicious recipe for you, these vegan and gluten-free buckwheat and squash gnocchi with kale.

I've already shared a gnocchi recipe in the past, but it was quite time-consuming and its outcome wasn't always positive. These gnocchi, however, are very easy to make and they bring both colour and taste of Autumn on your table. There's a subtly sweet flavour from the squash (its intensity will depend on your flour, if you use white buckwheat flour it will be more prominent; if you use whole buckwheat flour, like I did, it will be very light), nuttiness from the buckwheat and hints of sage and nutmeg that bring the gnocchi to another level.


To succeed in making these gnocchi light and soft, you will need a dry-fleshed squash, like Kabocha or Kuri, so that it won't absorbs too much flour. Also, you don't have to use too much flour (the "dough" has to be soft) or you'll end up with tough gnocchi. I know it because that's how they turned out the first time.


I wanted to keep it simple so I simply served them with some kale sautéed with garlic and olive oil.

INGREDIENTS
1 serving
  • 1/8 Kabocha or Kuri squash
  • 40 g (1/4 cup) buckwheat flour
  • 1 teaspoon minced fresh sage
  • 1 pinch nutmeg
  • 5 Lacinato kale leaves
  • 1 garlic clove
  • 1/2 tablespoon extra virgin olive oil
  • Salt
  • Rice flour
INSTRUCTIONS
  • Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper. 
  • Wash the squash, remove the seeds and bake it for 25-30 minutes, or until soft. Let cool down, scoop out the flesh, mash it into a purée and measure 55 g (1/4 cup) of it and add it in a mixing bowl. 
  • Add sage, nutmeg and a pinch of salt and stir well. Add 30 g (3 tablespoons) of buckwheat flour and mix to incorporate. Add the remaining flour only if the mixture is too wet (if you add too much flour, the gnocchi will be tough).
  • Generously dust a working surface with rice flour and scoop the dough using a spoon. Dust the top with more flour to lightly cover its surface. 
  • Gently roll the dough. It should be soft but not sticky.
  • Cut the gnocchi with a sharp knife and move on a floured plate. 
  • Bring to a boil a pot of lightly salted water. Add the gnocchi and boil per 1-2 minutes, or until they are cooked. 
  • Meanwhile, remove the stems from the kale and chop the leaves. Mince the garlic. 
  • Heat the olive oil in a pan over medium heat, add the garlic and cook for 30 seconds, stirring occasionally. Add the kale, season with salt and cook for 1-2 minutes, stirring occasionally. 
  • Move the gnocchi to the pan using a slotted spoon, add some cooking water and stir to combine. 

Non penso che se ne sia accorto nessuno, ma non ho postato niente lo scorso venerdì. Non preoccupatevi, non è successo niente di brutto, ero solatnto troppo pigra e stanca per scrivere un post così mi sono presa un giorno libero. Ma ora sono tornata e ho una ricetta alquanto deliziosa per voi, questi gnocchi vegan e senza glutine di grano saraceno e zucca con cavolo nero.

Ho già condiviso una ricetta di gnocchi in passato ma richiedevano molto tempo e il risulato non è sempre stato positivo. Questi gnocchi, però, sono molto semplici da fare e portano sulla vostra tavola sia i colori che il sapore dell'autunno. C'è una leggera dolcezza che viene dalla zucca (la sua intensità dipende dalla vostra farina, se utilizzate la farina di grano saraceno bianca sarà più prominente; se utilizzate la farina di grano saraceno integrale, come ho fatto io, sarà molto leggera), il sapore ricco del grano saraceno e sentori di salvia e noce moscata che portano gli gnocchi ad un altro livello.

Affinché questi gnocchi risultino leggeri e morbidi, dovrete utilizzare una zucca a polpa secca, come la Kabocha o Kuri, così che non assorba troppa farina. Inoltre, non dovrete utilizzare troppa farina (l'impasto deve essere soffice) o otterrete degli gnocchi duri. Lo so perché è così che sono venuti la prima volta.

Volevo restare sul semplice così li ho serviti con cavolo nero saltato con aglio e olio di oliva.

INGREDIENTI
1 porzione
  • 1/8 zucca Kabocha o Kuri
  • 40 g di farina di grano saraceno
  • 1 cucchiaino di salvia fresca tritata
  • 1 pizzico di noce moscata
  • 5 foglie di cavolo nero
  • 1 spicchio di aglio
  • 1/2 cucchiaio di olio extravergine di oliva
  • Sale
  • Farina di riso

PROCEDIMENTO
  • Preriscaldate il forno a 200°C e foderate una teglia con carta da forno.
  • Lavate la zucca, togliete i semi e cuocetela in forno per 25-30 minuti, o finché morbida. Fatela raffreddare, rimuovete la polpa, riducetela in una purea e pesatele 55 g e mettetela in una ciotola.
  • Aggiungete salvia, noce moscata e un pizzico di sale e mescolate bene. Aggiungete 30 g di farina di grano saraceno e mescolate per incorporare. Aggiungete la farina rimanente soltanto se il composto è troppo umido (se aggiungete troppa farina, gli gnocchi saranno duri).
  • Infarinate generosamente una spianatoia con la farina di riso e disponetevi l'impasto utilizzando un cucchiaio. Infarinate la superficie con altra farina per coprirla leggermente. 
  • Rotolate gentilmente l'impasto. Dovrà essere morbido ma non appiccicoso.
  • Tagliate gli gnocchi con un coltello affilato e trasferiteli in un piatto infarinato.
  • Portate a bollore una pentola di acqua leggermente salata. Aggiungete gli gnocchi e bolliteli per 1-2 minuti, o finché sono cotti.
  • Nel frattempo, togliete dal cavolo e spezzettate le foglie. Tritate l'aglio.
  • Scaldate l'olio di oliva in una padella su fiamma media, aggiungete l'aglio e cuocete per 30 secondo, mescolando di tanto in tanto. Aggiungete il cavolo, salate e cuocete per 1-2 minuti, mescolando di tanto in tanto.
  • Trasferite gli gnocchi nella padella con un mestolo forato, aggiungete un po' di acqua di cottura e mescolate bene.

  2. Buono e pensare che il grano saraceno non è un cereale appartiene più alla famiglia dei legumi ma in realtà come classificazione è un ibrido. Ne parlerò questa domenica. Buona giornata e settima e...ovviamente preso nota.
