Raw Falafel // Falafel crudisti

These are not your typical falafel. But I guess you already guessed that by the recipe name. And by the photo. These falafel are in fact green and raw. What can I say, the heat is really getting to me, and I'm trying to eat as much cold/raw food as possible.

And the great thing about these green falafel is that they pretty much are like the regular ones. Cumin, coriander, parsley, garlic, onion. The flavours are there. And then there's the secret ingredient, chickpeas. Not regular and boring dried chickpeas, but fresh, green ones. Other than being incredibly cute, these chickpeas have a very unique, kind of nutty flavour and I just love them.


And there's another special ingredient, tahini. Since they are raw and I couldn't use any flour to bind them, I figured what a better way than using the sesame paste? And (of course) it worked. And there isn't a lot of it, so you can't really taste it, which is great because this way the taste is a bit more classic.


I do realise green chickpeas are hard to be found - I have them in my garden so all I have to do is pick them as soon as they are in the pods -, but if you do find them, please give them a try, they are really worth it!

INGREDIENTS
1 serving
  • 130 g (1 cup) green chickpeas
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 red onion
  • 1 garlic clove
  • 1 handful fresh parsley
  • 2 teaspoons tahini
  • 1/4 teaspoon salt

INSTRUCTIONS
  • Add all the ingredients except tahini in a food processor and blend.
  • Squeeze out as much water as possible from the dough, then add the tahini and combine.
  • Using your hands, form the balls to the desired size and place them in a flat dish lined with parchment paper.
  • Refrigerate for 2 hours.


Questi non sono i classici falafel. Ma immagino che lo avrete già capito dal nome della ricetta. E dalla foto. Questi falafel sono infatti verdi e crudi. Che posso dire, il caldo sta avendo la meglio su di me, e io sto cercando di mangiare il più possibile cibi freschi/crudi.

E la cosa fantastica di questi falafel verdi è che sono molto simili a quelli normali. Cumino, coriandolo, prezzemolo, aglio, cipolla. I sapori ci sono. E poi c'è l'ingrediente segreto, i ceci. Non normali e noiosi ceci secchi, ma quelli freschi e verdi. Oltre ad essere incredibilmente carini, questi ceci hanno un sapore molto unico, quasi di nocciola e io li adoro.

E poi c'è un altro ingredienti speciali, la tahina. Dato che sono crudi e non potevo utilizzare la farina per legarli, ho pensato che non ci sarebbe stato modo migliore dell'utilizzo della pasta di sesamo. E (ovviamente) ha funzionato. E non ce n'è tanta, quindi non si sente molto il che è ottimo perché così il sapore resta un po' più classico.

Mi rendo conto che non è facile trovare i ceci verdi - io ce li ho nell'orto quindi tutto quello che devo fare è raccoglierli nn appena sono nei baccelli -, ma se li trovare, perfavore provateli, ne valgono la pena!

INGREDIENTI
1 porzione
  • 130 g ceci verdi
  • 1 cucchiaino cumino in polvere
  • 1 cucchiaino coriandolo in polvere
  • 1/4 cipolla rossa
  • 1 spicchio d'aglio
  • 1 manciata prezzemolo fresco
  • 2 cucchiaini tahina
  • 1/4 cucchiaino sale

PROCEDIMENTO
  • Aggiungete tutti gli ingredienti tranne la tahina nel robot da cucina e frullate.
  • Spremete l'acqua dall'impasto il più possibile, quindi aggiungete la tahina e mescolate.
  • Formate delle palline della grandezza desiderata e mettetele in un piatto piano foderato con carta da forno.
  • Lasciate riposare in frigo per 2 ore.

  1. Sempre c'è qualcosa da imparare dalle tue ricette! I ceci verdi, mai sentito prima, fatto sta che mi sembra una ricetta che mi piacerà tanto!

    1. Mi fa piacere! Comunque i ceci sono come i piselli, quando ancora non sono secchi sono verdi e si possono mangiare anche crudi. Basta soltanto raccoglierli prima.
