Cauliflower Buns // Panini di cavolfiore

 Remember what I told you a couple of months ago? That my first failed attempt at making cauliflower bagels wouldn't be the last one. So, as promised, here they are, my beautiful cauliflower bagels buns.

I know, I know. I promised you bagels, and I'm offering you buns, but if there's something I've noticed, attempt after attempt, is that making a hole without breaking it was nearly impossible. The lack of a hole does not make them any less good though.


These buns are indeed very tasty, and if there's something else I've noticed, attempt after attempt, is that wheater they hold their shape or not, they still were delicious and they did not end up in the trash can. By the way, the trick is to not over process the cauliflower and to squeeze out as much water as possible.

That said, these cauliflower buns are worth trying also because they have an infinity of uses. You can enjoy them for breakfast, stuff them with whatever you want and make a low-carb lunch/dinner and they are great as a snack as well.


INGREDIENTS
6 buns
  • 600 g / 21 oz (3 tightly packed cups) of cauliflower rice
  • 2 eggs
  • 14 g (2 tablespoons) of almond flour
  • 24 g (1/4 cup) of unsweetened finely shredded coconut
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of salt
  • Coarse sea salt and seeds, to top

INSTRUCTIONS
  • Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper and set aside.
  • In a large bowl, combine the cauliflower rice, beaten eggs, almond flour, shredded coconut, garlic powder and salt, and mix until well combined.
  • Divide the dough into 6 equal pieces and form the balls. Gently squeeze to extract any excess liquid and then flatten the ball out a bit.
  • Place the buns on the baking sheet, sprinkle each with coarse salt and seeds, then gently push them into the buns with the back of a spoon.
  • Place in the oven and bake for 30-40 minutes. Check periodically. For extra crisp buns, broil on high for 3-5 minutes.
  • Allow to cool down completely on a cooling rack before slicing. 

NOTES
  • To make cauliflower rice: add cauliflower florets in a food processor and process until they reach a rice-like consistency.
  • If the dough doesn't hold, add an additional egg and tablespoon of flour. 


Vi ricordate quello che vi ho detto un paio di mesi fa? Che il mio primo fallito tentativo nel fare i bagels di cavolfiore non sarebbe stato l'ultimo. Dunque, come promesso, eccoli, i miei belli bagels panini di cavolfiore.

Lo so, lo so. Vi avevo promesso dei bagels e vi sto offrendo dei panini ma se c'è qualcosa che ho notato, tentativo dopo tentativo, è che fare un buco senza romperlo era quasi impossibile. La mancanza del buco però non li rende meno buoni.

Questi panini sono infatti molto buoni, e se c'è qualcos'altro che ho notato, tentativo dopo tentativo, è che sia che tengano la forma o no, sono comunque gustosi e non sono finiti nel cesto della spazzatura. Per la cronaca, il trucco è di non lavorare troppo il cavolfiore e di eliminare l'acqua il più possibile.

Detto ciò, vale la pena provare questi panini di cavolfiore perché hanno un'infinità di utilizzi. Potete gustarli a colazione, riempirli con quello che volete e farci un pranzo/cena low-carb e sono anche ottimi come snack.

INGREDIENTI
6 panini
  • 600 g di riso di cavolfiore
  • 2 uova
  • 14 g di farina di mandorle
  • 24 g di cocco grattugiato senza zucchero
  • 1/4 cucchiaino di aglio in polvere
  • 1/4 cucchiaino di sale
  • Sale marino grosso e semi, per decorare

PROCEDIMENTO
  • Preriscaldate il forno a 200°C. Foderate una teglia con carta da forno e mettete da parte.
  • In una grande ciotola, unite il riso di cavolfiore, le uova sbattute, la farina di mandorle, il cocco grattugiato, l'aglio in polvere e il sale, e mescolate finché non saranno ben amalgati.
  • Dividete l'impasto in 6 parti uguauli e formate delle palle. Spremetele gentilemnte per far uscire il liquido in eccesso e quindi appiattitele un po'.
  • Mettete i panini nella teglia, cospargete ognuno con sale grosso e semi, quindi premeteli gentilmente nei panini con il dorso di un cucchiaio.
  • Mettete in forno e cuocete per 30-40 minuti. Controllate periodicamente. Per panini extra croccanti, metteteli sotto il grill al massimo per 3-5 minuti.
  • Lasciateli raffreddare completamente su una gratella prima di tagliarli. 

NOTE
  • Per fare il riso di cavolfiore: aggiungete le cimette di cavolfiore in un robot da cucina e frullate finché non hanno raggiundo la consistenza del riso. 
  • Se l'impasto non regge, aggiungete un altro uovo e cucchiaino di farina.
