Sesame Kale and Tofu with Lemon Rice Noodles // Cavolo riccio e tofu al sesamo con vermicelli di riso al limone

Believe it or not, but I needed a break from soups. Don't get me wrong, I still love them, but there are days when I feel like eating with chopsticks, and it's not very easy to eat a soup with those wooden things. Believe me, I've tried.

But I still wanted to go on the light and healthy way, so here I am pairing sautéed kale and tofu with rice noodles. Frankly, I don't know where the idea for this dish came from. I just wanted to eat sautéed kale and tofu with sesame seeds, a recipe I love and make quite often. Probably too often.


Then I thought rice noodles would pair well with them because they would add their weird texture to the dish, and I just love when the food in my plate has different consistencies. It's what I did in the beet and Beluga lentil soup as well.


And since rice noodles don't have much of a taste, I went for the only ingredient that could bring freshness to the dish and also help the body absorb the nutrients from the kale and tofu, lemon. And it all worked beautifully.

INGREDIENTS
1 serving
For the noodles
  • 62.5 g (2.2 oz) rice vermicelli noodles
  • Juice of half a lemon
  • 1/2 teaspoon cornstarch

For the kale and tofu
  • 90 g (3.2 oz) firm tofu, diced
  • 50 g (2 cups) kale, chopped
  • 1 teaspoon sesame seeds
  • Extra virgin olive oil
  • Salt

INSTRUCTIONS
For the noodles
  • Add the noodles in a bowl of warm water, soak them for 4 minutes, then drain them.
  • Combine the lemon juice and cornstarch, pour the mixtures in a pan and let it thicken. Add the noodles and stir well.

For the kale and tofu
  • Lightly coat a non-sticking pan with olive oil and heat it over medium heat. Add the tofu, season with salt, and cook for about 2 minutes on each side, until the tofu is golden and crispy. Remove tofu and keep warm.
  • Add the kale to the same pan, and sautée for about 5 minutes. Turn off the heat, add the sesame seeds, tofu and a dash of oil, and stir to combine.

  • Add the noodles to a plate, lay the kale and tofu on top and serve.


Credeteci o no, ma avevo bisogno di una pausa dalle zuppe. Non fraintendetemi, le amo ancora, però ci sono giorno in cui ho voglia di mangiare con le bacchette, e non è molto semplice mangiare una zuppa con quegli aggeggi di legno. Credetemi, c'ho provato.

Ma volevo comunque restare sul leggero e salutare, dunque eccomi qui ad abbinare cavolo riccio e tofu saltati in padella con vermicelli di riso. Francamente non so da dove mi sia venuta l'idea per questo piatto. Avevo voglia di mangiare cavolo riccio e tofu salatati con semi di sesamo, una ricetta che amo e faccio abbastanza spesso. Forse troppo spesso.

Poi ho pensato che i vermicelli di riso si sarebbero abbinati bene in quanto avrebbero aggiunto la loro consistenza strana al piatto, e io adoro quando il cibo nel mio piatto ha diverse consistenza. È quello che ho fatto anche nella zuppa di barbabietole e lenticchie Beluga.

E dal momento che i vermicelli di riso non hanno molto sapore, li ho abbinati con il solo ingredienti in grado di conferire freschezza al piatto ed aiutare l'organismo ad assorbire meglio i nutrienti del cavolo e tofu. Ed ha funzionato magnificamente.

INGREDIENTI
1 porzione
Per i vermicelli
  • 62.5 g vermicelli di riso
  • Succo di mezzo limone
  • 1/2 cucchiaino maizena

Per il cavolo riccio e tofu
  • 90 g tofu, tagliato a cubetti
  • 50 g cavolo riccio, spezzettato
  • 1 cucchiaino semi di sesamo
  • Olio extravergine di oliva
  • Sale

PROCEDIMENTO
Per i vermicelli
  • Aggiungete i vermicelli in una ciotola con acqua tiepida, teneteli in ammollo per 4 minuti, quindi scolateli.
  • Unite il succo di limone e la maizena, versate il composto in una padella e fate addensare. Aggiungete i vermicelli e mescolate bene.

Per il cavolo riccio e tofu
  • Ungete leggermente una padella antiaderente con olio di oliva e scaldatela su fiamma media. Aggiungete il tofu, salate, e cuocete per circa 2 minuti, so ogni lato, finché il tofu non sarà dorato e croccante. Togleite il tofu e tenetelo in caldo.
  • Aggiungete il cavolo nella stessa padella e cuocetelo, mescolando, per circa 5 minuti. Spegnete la fiamma, aggiungete i semi di sesamo, tofu e un filo di olio e mescolate. 

  • Mettete i vermicelli in un piatto, adagiatevi sopra cavolo e tofu e servite.
