Coconut Celeriac and Chickpea Curry // Curry di sedano rapa e ceci al cocco

Do you ever get obsessed with some foods and only want to eat those all day long? I do, and right now I'm obsessed with celeriac. I don't even bother cooking it, I just peel it and eat it as it is. Crunchy and with its celery-like flavour.

One day, however, I decided to dice it and sautée it to add some veggies to my mother's risotto, and it tasted even better. It was soft and kind of sweet, and that's when I decided I would have made this Indian-inspired dish.


The curry makes it so flavourful (if there's any Indian reading, please forgive me for using curry powder but I can't find curry leaves where I live. And sorry for using parsley instead of cilantro, I'm having troubles finding that one as well. But I read you can use parsley as well), and the coconut milk makes it sweeter and adds creaminess to the final dish.


INGREDIENTS
1 serving
  • 130 g (1 cup) peeled and diced celeriac
  • 115 g (3/4 cup) chickpeas, cooked or canned
  • 30 g (2 tablespoons) full fat coconut milk
  • 5 g (1 tablespoon) coconut flakes
  • 1/2 tablespoon coconut oil
  • 1/4 onion, chopped
  • 1 garlic clove, minced
  • 1 cm (0.4 inches) fresh ginger, minced
  • 1/2 teaspoon curry powder
  • 180 ml (3/4 cup) chickpea water, vegetable stock or water
  • Lime juice
  • Fresh parsley or cilantro
  • Salt
  • Pepper

INSTRUCTIONS
  • Heat the oil in a pan over medium heat. Add the onion, ginger and garlic and cook, stirring occasionally, until onion is translucent, about 2 minutes.
  • Add the celeriac, chickpeas and curry powder, stir and cook on high heat for about a minute.
  • Add the coconut milk, coconut flakes and liquid of choice, stir and bring it to a simmer.
  • Reduce the heat, cover and simmer for 15 minutes. Taste the curry and season with salt and pepper.
  • Remove the curry from the heat and squeeze some lime juice over the top, and stir to combine.
  • Serve with white or brown Basmati rice and some chopped fresh parsley or cilantro.


Vi capita mai di fissarvi con dei cibi e di non voler mangiar altro che questi? A me si, e al momento sono in fissa con il sedano rapa. Non mi prendo neanche la briga di cuocerlo, lo sbuccio e lo mangio così com'è. Croccante e con il suo sapore che ricorda il sedano.

Un giorno, però, ho deciso di farlo a cubetti e cuocerlo in padella per aggiungere un po' di verdure al risotto di mia madre, ed era ancora più buono. Era morbido e dolciastro ed è quando ho deciso che avrei fatto questo piatto di ispirazione indiana.

Il curry lo rende molto saporito (se c'è qualche indiano che sta leggendo, per favore perdonatemi per aver utilizzato il curry in polvere ma non riesco a trovare le foglie di curry dove vivo. E scusate per il prezzemolo al posto del coriandolo, sto avendo dei problemi a trovarlo) e il latte di cocco lo rende più dolce e aggiunge cremosità al piatto finale.

INGREDIENTI
1 porzione
  • 130 g sedano rapa pelato e tagliato a cubetti
  • 115 g ceci, cotti o in scatola
  • 30 g latte di cocco
  • 5 g granella di cocco
  • 1/2 cucchiaio olio di cocco
  • 1/4 cipolla, spezzettata
  • 1 spicchio d'aglio, tritato
  • 1 cm zenzero fresco, tritato
  • 1/2 cucchiano curry in polvere
  • 180 ml acqua ceci, brodo vegetale o acqua
  • Succo di lime
  • Prezzemolo o coriandolo fresco
  • Sale
  • Pepe

PROCEDIMENTO
  • Scaldate l'olio in una padella su fiamma media. Aggiungete la cipolla, zenzero e aglio e cuocete, mescolando di tanto in tanto, finché la cipolla diventa trasparente, circa 2 minuti.
  • Aggiungete il sedano rapa, ceci e curry in polvere, mescolate e cuocete a fiamma alta per circa un minuto.
  • Aggiungete il latte di cocco, granella di cocco e liquido di vostra scelta, mescolate e portate ad un leggero bollore.
  • Riducete la fiamma, coprite e fate sobbollire per 15 minuti. Provate il curry e salate e pepate.
  • Togliete il curry dal fuoco e spruzzatevi sopra del succo di lime, e mescolate per amalgamare.
  • Servite con riso Basmati bianco o integrale e con del prezzemolo o coriandolo fresco spezzettato.

    1. Thank you! By the way, I'm obsessed with cauliflower too. So obsessed I put some in my morning oatmeal as well. Not everyday, still I do that. And I love it. And my family doesn't understand me.

  7. Mi piace moltissimo questo mix di sapori...sai che ho avuto anch'io il periodo che ero in fissa con il sedano rapa?? Adesso è un po' che non lo mangio e mi hai fatto venire voglia :-P
