Blueberry Buckwheat Pancakes // Pancakes di grano saraceno ai mirtilli

Nothing says "Have a good day" like a big plate of pancakes. Meet then my blueberry buckwheat pancakes. I know, they don't have the best of the looks (and the bad lighting didn't help either), but I swear they make up for their appearance with a wonderful taste.

Thanks to the buckwheat flour, these pancakes have a light, airy and kind of spongy (in a good way) consistency: it feels like having cake for breakfast at every single bite!

INGREDIENTS
2 servings
  • 100 g buckwheat flour
  • 1 tablespoon maple syrup
  • 1 teaspoon baking powder
  • Salt
  • 250 ml (1 cup) soy milk
  • 1 egg
  • 50 g (1/2 cup) blueberries
  • Coconut oil, for the skillet

INSTRUCTIONS
  • Break the egg, and separate the egg yolk and the egg white. Whisk the yolk, whisk the egg white until firm and set aside (this will make your pancakes even lighter!).
  • Sift the flour and baking powder into a bowl and make a well in the middle. Add the yolk, the maple syrup, a pinch of salt and a splash of the milk. Whisk gradually incorporating the flour to make a smooth cream. Whisk in the rest of the milk, and gently stir in the blueberries. Gently incorporate the egg white.
  • Preheat your non-stick skillet over medium-low heat and brush with coconut oil. Give the batter a slight swirl, and drop a ladleful of batter into the pan. Cook for 2 to 3 minutes until small bubbles form on the surface of the pancake, and flip. Cook on the other side for 1 to 2 minutes, or until golden.
  • Cover with kitchen paper to keep warm while you make the rest of the pancakes. Serve with maple syrup (or golden syrup if you prefer) and some blueberries.

Non c'è niente che dice "Buona giornata" come un bel piatto di pancakes. Vi presento dunque i miei pancakes di grano saraceno ai mirtilli. Lo sono, non hanno un bellissimo aspetto (e la pessima luce non è stata di grande aiuto), ma vi prometto che compensano il loro aspetto con un sapore meraviglioso.

Grazie alla farina di grano saraceno, questi pancakes hanno una consistenza leggera, ariosa e spugnosa (in senso buono): sembra di mangiare una torta a colazione ad ogni singolo morso!

INGREDIENTI
2 porzioni
  • 100 g farina di grano saraceno
  • 1 cucchiaio di sciroppo d'acero
  • 1 cucchiaino di lievito in polvere
  • Sale
  • 250 ml di latte di soia
  • 1 uovo
  • 50 g mirtilli
  • Olio di cocco, per la padella

PROCEDIMENTO
  • Rompete l'uovo, e separate il tuorlo dall'albume. Sbattete il tuorlo, montate l'albume e mettete da parte (questo renderà i pancakes ancora più leggeri!).
  • Setacciate la farina e il lievito in una ciotola e fate un foro al centro. Aggiungete il tuorlo, lo sciroppo d'acero, un pizzico di sale e un po' del latte. Mescolate incorporando gradualmente la farina per fare una crema omogenea. Aggiungete il resto del latte e mescolate, quindi aggiungete delicatamente i mirtilli. Sempre delicatamente incorporate l'albume.
  • Fate scaldare una padella su fuoco medio-basso e spennellate con olio di cocco. Mescolate leggermente l'impasto, e versate un mestolo di impasto nella padella. Cuocete per 2-3 minuti finché si formeranno delle piccole bolle sulla superficie dei pancakes, e girateli. Cuocete dall'altra parte per 1-2 minuti, o finché dorati.
  • Coprite con carta assorbente da cucina per tenere i pancakes al caldo mentre fate gli altri. Servite con sciroppo d'acero (o golden syrup se preferite) e alcuni mirtilli.
